Happy Meatless Monday!!
I never thought I could truly enjoy a quesadilla without some meaty goodness in it...but I was sorely mistaken.
Check out this recipe (holler at Rachel Ray for this one)
Ingredients:
*3 cups fresh corn
*1/2 cup chopped red bell pepper
*1/2 cup chopped scallion
*2 tablespoons chopped cilantro
*2 tablespoons lime juice
*1/4 teaspoon chile powder
*Salt
*4 large flour tortillas
*2 cups shredded monterey jack
*Lime wedges
*Salsa & non-fat sour cream/non-fat plain Greek yogurt for toppings
I added some cayenne pepper and red pepper flakes for a little kick (spicy foods rev up your metabolism, woooo!)
